“Fou de Chêne” is a white wine made from Chardonnay grapes planted on clay-granitic terroirs. This hand-harvested cuvée is vinified by direct pressing with light settling and low-temperature fermentation in 500-liter barrels. Aging takes place in the same 500-liter barrels, aged from 1 to 5 years (no new wood), for 11 months. This wine develops notes of white-fleshed fruit (white peach, comice pear), floral notes (goat leaf, acacia). It offers a fine balance between ageing on lees, freshness and substance.
